Winemaker’s Notes:
In our experience anything more than ~4% Petit Verdot has quite a significant and characteristic impact on the wine blend. Interestingly, by itself it doesn’t have overbearing qualities; rather, it has nice fruit qualities, lots of depth and a surprisingly balanced flavor with lots of tannin and structure. We thought it would be interesting to bottle some by itself to share with you as a unique standalone wine.
The grapes for this wine are 100% from the boutique vineyard planted, maintained and picked by Chuck Fiola in the Konnowac hills.
The grapes were crushed, destemmed and divided into small lots for fermentation, each receiving a unique yeast inoculation to enhance complexity of the finished wine. The wines were allowed an extended maceration of ~4 weeks then lightly pressed in ~half ton lots, and moved to barrels.
The wine was racked several times during aging which produced a natural clarification. The small scale production methods used to make this wine included: hand sorting of grapes, small fermentation and press batches allowing for individualized wine making decisions per batch and manual approaches to nearly every step in the process including bottling and labeling.
